Updates and Christmas cakes

The past months see us thinking about new ideas, new creations, trying out countless new recipes, sourcing for new suppliers, food source and how we can improve to bring you the best of what we can offer. Another exciting news is we will be doing cookies and cupcakes for birthday parties, weddings, baby full month parties, ROMs and any other occasions that catches your fancy!
We have also been busy with our Christmas series of cakes and goodies which we intend to open for ordering real soon. “Why so soon”? Some of you may ask. Well dearies, our signature Christmas fruit cake is doused with alcohol (Glenfiddich 12 or 18 Years Old Single Malt Scotch Whiskey, to be precise) and the longer you keep it the more intense the flavour becomes. Each bite is a chock-full of fruits – cranberries, currants, candied ginger, pineapple, dates, sun-dried apricot and prunes! It is moist and fruity with an explosion of flavors – alcohol, molasses and spice! Exotic yet homey for the faint hearted.
This year, we are also allowing you to “customize” your Christmas cake! How is that for a personal touch! Don’t like apricot? No worries, let us know what you like and we will be more than happy to do it for you.
Here’s a list of what options you may choose from:
Alcohol:
Glenfiddich 18 Years – Scotch Whiskey ; Myers Dark Rum; Jack Daniel’s Bourbon Whiskey; Bombay Gin; Hennessey Brandy; Bacardi; Malibu Coconut Rum.
If your favorite alcohol is not listed above, no worries, let us know and we will help you source, failing which, we would be more than happy if we could get some from you!
Fruits and nuts:
Cranberries; Raisins/currants; Sun-dried apricots; Dates; Candied Ginger; Dried pineapple; Dried Mango; Prunes; Candied kiwi; Blueberries; Almond flakes/chopped almonds; Walnuts;
Pine nuts/kernels; Pecan; Macadamia; Hazel.
Now, the most important question in your mind – pricing!
So how do we charge?
Well, for a reasonable price starting from $55¸ you would get our standard 1kg cake with Christmas decorations. (decorations shown currently are subject to change)
Let us know if you wish to customize your very own Christmas cake! We will give you a reasonable quote depending on your choices.
As for those of you who wishes to order early and douse the cake yourself, we are pleased to let you know that we will provide you with the Christmas cake decorations separately so that you may add the finishing touches yourself just before your party!

Recipe Time! Super Moist carrot mufin

You will need 3 medium bowls to mix
3 cups finely grated carrots

1 1/2 cups chopped walnuts1 cup of raisins
2 cups all purpose flour (405)2 teaspoons baking soda

1 teaspoon salt
2 1/2 teaspoon ground cinnamon
1 teaspoon of vanilla
1 cup of sugar

1 1/4 cups of oil
4 large eggs
Preheat the oven to 150°C.

Butter and flour a large muffin tin.
In bowl 1, mix the grated carrots, walnuts and raisins together.

In bowl 2, mix the flour, baking soda, salt, cinnamon together and vanilla.
In bowl 3, mix the sugar and the oil together.
Then add in the eggs to the sugar and oil mixture 1 at a time, mixing for about 30 seconds after each.
Add the flour mixture to bowl 3 (the sugar and egg mixture) and stir until blended.

Finally add in the carrot mixture and mix until blended.
Divide the batter into the muffin tins.
Bake until a knife inserted into the center comes out clean. It took me about 20 minutes for the muffins. Make sure to cool the muffins in the pans for at least 15 minutes. Turn out onto racks and eat away!
P.S. This muffin recipe is not too sweet, and one can add more sugar depending on your own taste.

Welcome to the Cookie Parlour

I had never thought of the idea of creating my own blog, let alone one that is food related. However, after trawling through the internet searching out and finding the best recipes to try, I have been inspired to start my own.

It all started quite accidently while on the Internet searching for some recipes for cupcakes. I stumbled across some food blogs and from that moment on decided I liked the idea of sharing my joys of baking.

It would be such a shame to waste all of the gastronomic delights on just my family, so the idea of sharing it with some people with a mutual interest seemed quite fun.

I am often frustrated with store-bought confectioneries. Simply because they are either too sweet, poorly packaged or simply over-rated.

Using only the finest ingredients, Cookie Parlour is my intrepid attempt at capturing the joy of baking and we are now ready to share this joy with everyone else!
